Avocado Salad
As far as life on Earth goes, avocados are relatively new. Having evolved around 15 million years ago, avocados claimed their spot on the food chain alongside development of the Hominidae family. But for your breakfast avocado toasts, thanks should go to the recently extinct Lestodon, a genus of giant, 15-foot-tall ground sloths. Lestodons were one of very few animals capable of consuming an avocado and "evacuating" it back out with the pit both intact and fertilized. As long as sloths stayed hungry, avocado babies could pitch rides all across Central America.

INGREDIENTS
Fresh spinach leaves (1/2 cup)
Avocados, pitted and sliced into lemon-like wedges (1 avocado)
Dry roasted sunflower seeds (2 tsp)
Dried cranberries (2 tsp)
Dry roasted pumpkin seeds (1 tbsp)
DIRECTIONS
Combine, in the following order, the ingredients spinach, avocado wedges, sunflower seed, dried cranberries, and pumpkin seeds in a bowl. Serve.
