Baked Cheese Grits with Sausage

INGREDIENTS

  • Water (8 cups)

  • Grits (2 cups)

  • Olive oil (1 tbsp)

  • Onions, diced (3/4 cup)

  • Garlic,minced (4 cloves)

  • Red bell peppers, chopped (3/4 cup)

  • Precooked sausage, sliced into discs (12 oz or .75 lb)

  • Rosemary (2 tsp)

  • Cheddar cheese, grated (3 cups, divided)

  • Butter (1/2 cup or 1 stick)

  • Eggs (4 large)

  • Milk (1/2 cup)


DIRECTIONS

  1. Bring water to a boil on high heat. Stir in grits, cover, and reduce heat to low. Grits will take about 15 minutes to cook. Depending on the type of grits, you may need soften further by adding more water afterward and letting cook a little longer.

  2. Meanwhile, heat oil in a skillet on medium high heat. Add onions and garlic and fry for 4 minutes. Add pepper and cook for 5 minutes. Add sausage (though it is precooked, heating it on a pan gets the juices flowing).

  3. When grits are almost done, preheat oven to 325 °F and grease a casserole dish.

  4. Once grits are fully cooked, add 2 cups cheese and butter. Mix and melt. In a small bowl, whisk together eggs and milk, then add to grits mixture (combine thoroughly). Stir in vegetables and sausage.

  5. Transfer grits mixture to casserole dish. Top with 1 cup cheese. Do not cover. Bake for 50 minutes to an hour. Let cool 5 minutes. Serve.
