Chicken (2 breasts)
Olive oil (2 tbsp)
Onions (1/2 cup)
Garlic (2 cloves)
Carrots (2 sticks)
Red bell pepper (3/4 cup)
Green olives (10)
Pasta sauce (32 oz)
Thyme (1 tsp)
Basil (1 tsp)
Oregano (1 tsp)
Salt & Pepper
Cooked pasta, mashed potatoes, or rice
Note: All vegetable ingredients are optional and substitutable.
In a large pot, heat oil on high.
Cut chicken into cubes and set aside.
Chop onions, carrots, and bell pepper, halve green olives, and mince garlic. Add to pot.
Once onions are translucent, add chicken, then saute with thyme, basil, oregano, salt, and pepper.
When all sides of the chicken are visibly cooked, add tomato sauce and olives. Stir and simmer with lid on for 20 minutes or until chicken is tender.
Ladle over cooked pasta, mashed potatoes, or rice and serve.
