Chicken Fried Rice

INGREDIENTS

  • White rice (2 1/3 cups)

  • Diced carrots (3/4 cup)

  • Peas (2/3 cup)

  • Chopped onions (1/2 cup)

  • Chicken breast, cubed (3/4 lb)

  • Butter (1 1/2 tbsp)

  • Eggs (2 medium)

  • Sesame oil (2 tbsp)

  • Soy sauce (1 tbsp)


DIRECTIONS

  1. Bring 5 cups of water to a boil and add rice. Reduce heat to low and simmer for 20-25 minutes.

  2. Boil carrots for 5 minutes. Add peas and boil for 30 more seconds. Strain and set aside.

  3. In a large oiled skillet on medium high heat, fry onions for 2 minutes. Add chicken, carrots, and peas and cook until most pink from the chicken is gone. Stir in rice and butter.

  4. Whisk eggs in a small bowl and drizzle over the rice. Place a lid on the skillet and check occasionally until the eggs have whitened.

  5. Stir in sesame oil and soy sauce and serve.
