Classic Chili

INGREDIENTS

  • Olive oil (1 tbsp)

  • Medium yellow onion, chopped (1)

  • Garlic, diced (2 cloves)

  • Green bell pepper, chopped (1/2)

  • Carrots, sliced into discs (1)

  • Ground beef (1 1/2 lb)

  • Diced tomatoes (one 15-oz can)

  • Red kidney beans (one 16-oz cans)

  • Chili powder (1 tsp)

  • Cumin (1 tsp)

  • Oregano (1 tsp)

  • Cayenne powder (1/2 tsp)

  • Paprika (1 tsp)

  • Salt (1/2 tsp)

  • Beef broth (2 cups)


DIRECTIONS

  1. Heat oil in a stock pot. Fry onions until fried. Add garlic. Fry. Add bell peppers and carrots. Fry. Add beef. Fry. Add tomatoes, kidney beans, chili powder, cumin, oregano, cayenne powder, paprika, and salt. Stir and cook 3 minutes. Add beef stock. Bring to boil. Lower to simmer. Cook 25 minutes, stirring occasionally. Serve with sour cream.
