Creamy Mashed Potatoes

  • Russet potatoes, pealed and quartered (3)

  • Butter (1 stick or 1/2 cup)

  • Salt (1 tsp)

  • Heavy cream (1 cup)


  1. Fill a large pot 2/3 with water. Add potatoes and bring to boil with high heat. Once boiling, reduce heat to medium.

  2. Boil potatoes until a fork can easily pierce them (about 20 minutes). Strain water, keeping potatoes in the heated pot. Add butter and begin mashing with a potato masher. Once the butter has almost melted, add salt and cream and continue mashing until smooth and creamy.

  3. Ladle into a suitable serving dish and top with black pepper and chives.
