Curry Chicken Salad

On September 10, 1945, Mike the chicken was chopped in two. Its top half, the head, dropped to the ground. Mike's body, though leaking blood from the neck, lingered upright and resumed to wobble on two legs. It could not see, hear, or crow, but continued pecking for kernels. Soon, the bleeding ceased as a clot formed at the base of Mike's neck. It could breathe, pump blood, and be fed food with some assistance. Mike the Headless Chicken made a small fortune for its owners as a circus sideshow until it died in March, 1947 from choking on a kernel of corn.

  • Rotisserie chicken or leftover chicken meat (3 cups)

  • Mayonnaise (2/3 cup)

  • Seedless grapes, quartered (about 3/4 cup)

  • Celery, sliced into discs (1 stalk)

  • Scallions, sliced (2)

  • Ground black pepper (1/2 tsp)

  • Curry powder (2 tbsp)

  • Paprika (1 tsp)

  • Salt (1/2 tsp)


  1. Combine all ingredients in a medium size bowl. Serve on a bed of arugula or as a croissant sandwich.
