Fastest Chili West of the Mississippi

INGREDIENTS

  • Olive oil (1 tbsp)

  • Onions, diced (1/2 onion)

  • Red bell peppers, chopped (1 pepper)

  • Chili powder (2 tsp)

  • Garlic powder (2 tsp)

  • Paprika (2 tsp)

  • Salt (1 tsp)

  • Ground beef (1 lb.)

  • Diced tomatoes (one 15-oz. can)

  • Red kidney beans (one 16-oz. can)

  • Beef broth (1 1/2 cups)


DIRECTIONS

  1. Heat oil in a large stockpot on high heat. Add onions, peppers, chili powder, garlic powder, paprika, and salt and saute for 5 minutes.

  2. Add ground beef and cook until browned (about 4 minutes).

  3. Add tomatoes, kidney beans, and broth. Simmer on medium heat, stirring occasionally, for 10 minutes. Dish and serve.
