Eggs (2 large)
Milk (3/4 cup)
Ground nutmeg (1/4 tsp)
Cinnamon (1/2 tsp)
Vanilla (1 tsp)
Olive oil (1 tbsp)
Sliced bread (5 slices)
Butter (1 tbsp)
Maple Syrup (3 tbsp)
In a shallow bowl, beat together eggs, milk, nutmeg, cinnamon, and vanilla.
Heat oil in a large skillet on medium heat.
Soak each slice of bread on both sides, then lay as many as will fit on your skillet. Check undersides of bread occasionally to check for doneness. Flip, cook other side, then set aside and cook more slices.
Put butter in a small bowl and microwave to soften. Stir in maple syrup, then microwave for a few more seconds, just to warm.
Drizzle syrup-butter mixture on cooked toast. Serve with fresh fruit.
