Garlic Fried Rice with Egg

INGREDIENTS

  • Olive oil (1 tbsp)

  • Butter (1 tbsp)

  • Large yellow onion, diced (1/2)

  • Garlic, minced (8 cloves)

  • White rice, cooked (4 cups)

  • Salt (1 tsp)

  • Milk (1/2 cup)

  • Snow peas, thawed or fresh (3/4 cup)

  • Chives (1 tbsp)

  • Eggs (4 large)

  • Ground black pepper (to taste)


DIRECTIONS

  1. Heat oil and butter in a large, deep skillet on medium-high heat.

  2. Fry onions until translucent. Add garlic and continue cooking for 1 minute. Stir in rice, salt, and milk. Make sure ingredients are thoroughly combined. Add peas and chives.

  3. Using a ladle, make four small crevices or wells on the surface of the rice. Carefully crack the eggs and set yolks into the wells. Season with pepper. Reduce heat to medium-low and cover with lid. Allow eggs to cook until yolks are whitened over. Serve.
