Macaroni and Beans

INGREDIENTS

  • Macaroni (1 1/2 cup)

  • Cheddar cheese (1/2 cup)

  • Chili or Kidney beans (3/4 cup)

  • Tomato paste (6 oz / one small can)

  • Butter (1/4 stick)

  • Sour cream (1/3 cup)

  • Salt (a pinch)


DIRECTIONS

  1. Boil 6-8 cups water in a medium saucepan on high heat.

  2. Add macaroni and reduce heat to simmer/low.

  3. Taste macaroni after a couple minutes -- if it's mushy, it's done. Strain the water and keep macaroni in pot.

  4. Add butter, cheese and salt to pot, melt, then add sour cream and tomato paste. Stir until fully incorporated.

  5. Add beans and mush them around a bit. Serve with paprika and hot sauce.
