Butter (2 tbsp, divided)
Onions, diced (1/4 cup)
Garlic, minced and pressed (1/4 tsp)
Bell peppers, chopped (1/3 cup)
Ham, cut into small cubes (1/3 cup)
Large eggs (2)
Salt and pepper
Cheddar cheese, shredded (1/4 cup)
Melt 1 tbsp butter on a skillet over medium-high heat.
Fry onions until translucent, then add garlic, bell pepper, and ham and continue frying for about 5 minutes. Remove ingredients from skillet and reduce heat to medium-low. Place another 1 tbsp of butter onto pan.
While butter is melting, whisk (using a fork) eggs and 2 tbsp water in a small bowl. Pour mixture onto pan and toss on a pinch of salt and pepper. When partially cooked, add the cooked ingredients and cheese to one half of the omelette.
When the eggs appear fully cooked, fold the empty half onto the half with ingredients. Continue cooking for 1 minute. Serve.
