Peanut Butter Cookies

Butter, softened (1 stick or 8 tbsp)
Brown sugar (1/2 cup)
White granulated sugar (1/2 cup)
Vanilla (1 tsp)
Peanut butter (1 cup)
Flour (1 1/2 cups)
Salt (1/2 tsp)
Baking soda (1 tsp)
Preheat oven to 375 °F.
In a medium size bowl, mix together butter, brown and white sugar, vanilla, and peanut butter. Beat in egg and continue mixing until smooth.
In another bowl, mix together flour, salt, and baking soda. Add the dry ingredients to wet ingredients 1/2 cup at a time, stirring in between.
Roll out 1-inch balls and place on a greased baking sheet. Press each one down with a fork to make a crosshatch pattern.
Bake for 10 minutes or until sides begin to brown. Cool, then serve.
