Pesto

Besides inspiring this buttery dipping sauce, basil has been brewing a good deal of unspoken controversy amidst cultural traditions. In Greece, basil is both denoted a symbol of hatred and used as a tool to sprinkle holy water. In European lore, the herb often symbolizes Satan, yet is placed in the hands of dead beloved ones to secure a safe journey to the afterlife. In India, basil leaves are sometimes placed in the mouths of the dying to boost chances for communion with God; in a famous Italian poem, basil served as a bed for the severed head of a murdered debaucher. Be careful where you eat this bread spread—you're either respecting the dead or worshiping the devil.

INGREDIENTS

  • Fresh basil (2 cups)

  • Pine nuts (1/4 cup)

  • Lime juice (1 tsp)

  • Butter (1 tbsp)

  • Fresh garlic, minced (2 cloves)

  • Salt (1/2 tsp)

  • Olive oil (1/3 cup)

  • Parmesan cheese, grated (1/2 cup)


DIRECTIONS

  1. To a food processor, add basil, pine nuts, lime juice, butter, garlic, and salt. Blend until basil and nuts are finely chopped up. Slowly add olive oil until the consistency matches that of standard pesto sauce (you do not need to add all of the 1/3 cup).

  2. Add Parmesan cheese and pulse food processor a few times until cheese is incorporated. Serve with anything Italian.
