Stuffed Mushrooms

INGREDIENTS

  • Crushed saltine crackers or dried breadcrumbs (1/2 cup)

  • Parmesan cheese (1/2 cup)

  • Cream cheese (1/4 cup)

  • Green shallots, chopped (1/4 cup)

  • Garlic powder (1/4 tsp)

  • Salt & pepper

  • White mushrooms (about 24)

  • Dried parsley (2 tbsp)


DIRECTIONS

  1. Preheat oven to 375 °F.

  2. In a medium-size bowl, mix together crackers/breadcrumbs, Parmesan cheese, cream cheese, shallots, garlic, salt, and pepper.

  3. Load mushroom cavities with the mixture until it just barely overflows. Lay out on a greased baking sheet.

  4. Bake until tops are golden brown (about 25 minutes). Take out and sprinkle on parsley. Serve.
