Top Secret Baked Cod
This is a super duper top secret cod recipe.
A lot of words rhyme with cod. There's mod, pod, god, rod, tod, sod, nod, bod, and some others too.
It's illegal to catch cod in the Gulf of Main in the fall and parts of the month of April.
The owner of a cod was once sued by a general named AM. The complaint was that the cod was using a car owned by Mr. AM and flaunting it without proper licensing. The case was settled in favor of the cod thanks to the help of a man named Roger.
Yukon potatoes, quartered (6 potatoes)
Olive oil (2 tbsp)
Butter, chopped (4 tbsp)
Fresh thyme, chopped (2 tbsp)
Salt & Pepper (to taste)
Cod (4 hefty fillets)
Cayenne powder (1 tsp)
Lemon juice (1 tbsp)
Preheat oven to 400 °F.
Dump potato wedges in a 9x13-inch baking dish. Shower with olive oil and toss in thyme, butter, and a generous amount of salt and pepper. Place in oven and bake for 30-35 minutes or until potatoes are tender.
Take the potatoes out and nuzzle the fish fillets between them. Drizzle with a bit more olive oil and season with cayenne, salt, and pepper. Place back in oven and bake for 15-20 minutes.
Remove from oven, splash with lemon juice, and serve.
