Tuna fish (two 5-oz cans)
Mayonnaise (4 tbsp)
Bread crumbs (1 1/2 cups)
Saltine crackers (about 10 crackers)
Paprika (1 tsp)
Olive oil (1 tbsp)
In a blender, pulse tuna 5-6 times in order to thin out large clumps of meat. Dump into medium size bowl and mix in mayonnaise, bread crumbs, crackers (after hand-crushing them), and paprika until mostly homogeneous.
Heat olive oil on stove with medium-high heat (toss a bread crumb into the oil in order to tell if it is hot enough -- if it sizzles, it is ready).
With clean hands, mold several (as many as you can) burger-size patties of the fish mixture and place onto pan (as many as can fit).
Fry for 3-5 minutes, checking the underside of the patty periodically to see if it is golden brown. When one patty is browned on the bottom, flip it and cook other side.
Serve as soon as the other side is golden brown.
