Water (2 cups, divided)
Sugar (1 cup)
Vanilla extract (1 1/2 tsp)
Gelatin (1 tbsp)
Mix 1 cup water, sugar and vanilla together until sugar dissolves. Put in refrigerator while you prepare the other ingredients.
Boil or microwave one cup of water to boiling temperature.
In a medium size bowl, mix the water with gelatin. Stir constantly for 2 minutes, then pour in the refrigerated sugar water. Mix for another 2 minutes.
Leave in bowl or pour into another container which you wish the jell-o to form in. Set in refrigerator for 2+ hours (more time if there is less surface area). Serve when the jell-o looks solid.
